PREPARE the ravioli dough by rolling fresh dough out to a thin sheet on a floured surface. Or if using pre-made dough, simply lay it out on flat your floured workspace. Cut the dough into squares or rounds, about 2-4 inches each to make 4 large, or 6 medium raviolis.

ASSEMBLE the ravioli by placing a small spoonful of the hamburger and shredded cheese in the center of each square. Moisten the edges of the dough with water and fold each square over to form a triangle or rectangle, pressing down the edges tightly to seal the ravioli.
