What?? A cheeseburger with tangy Cabot Vermont Sharp Shredded Cheddar, topped with the classic cheeseburger toppings like tomatoes, pickles and onion... But in a ravioli? Who knew these classic comfort food flavors could be captured inside a handy and delicious ravioli pocket of goodness. Serve the cheeseburger ravioli warm and enjoy this cheesy, savory, and unique take on a classic.


Directions

  1. PREPARE the filling by heating olive oil in a large pan over medium heat. Add the ground beef and season with salt and pepper. Cook until browned and fully cooked through, about 5-7 minutes. Once cooked, drain any excess fat and set aside to cool slightly.

  2. PREPARE the ravioli dough by rolling fresh dough out to a thin sheet on a floured surface. Or if using pre-made dough, simply lay it out on flat your floured workspace. Cut the dough into squares or rounds, about 2-4 inches each to make 4 large, or 6 medium raviolis.

  3. ASSEMBLE the ravioli by placing a small spoonful of the hamburger and shredded cheese in the center of each square. Moisten the edges of the dough with water and fold each square over to form a triangle or rectangle, pressing down the edges tightly to seal the ravioli.

  4. BRING a large pot of salted water to a boil. Gently drop the ravioli into the boiling water, cooking in batches if necessary, and cook until they float to the surface, about 3-4 minutes. Remove from the water with a slotted spoon and set aside.

  5. ARRANGE the cooked ravioli on a serving plate. Sprinkle additional shredded cheddar cheese on top while the ravioli is still hot to allow it to melt slightly.

  6. GARNISH the top the of the ravioli with diced tomatoes, diced pickles, crispy bacon lardons, pickled onions, and a sprinkle of sesame seeds for a burst of flavor and texture.
